Indian-style Spiced rice (serves 4 or 6 as a side)
Preparation time: 10 minutes
Cooking time: 30 minutes
Equipment: Rice cooker or heavy-based saucepan with lid
Ingredients
3 cups long grain or basmati rice
1 brown onion, diced finely
1-2 cloves garlic, crushed
1 tsp turmeric
½ tsp cinnamon
½ tsp allspice (optional)
1 cup peas (fresh or frozen)
3-4 cups (approx.) vegetable stock
2 Tbs butter
1 Tb vegetable or seed (olive or grapeseed) oil
Method
- Heat oil and butter in saucepan or rice cooker and then add onion and spices. Fry gently for a few minutes to allow flavours to develop and then add (uncooked) rice. Stir mixture for a few moments until the rice and flavouring ingredients are blended.
- Add the stock, stir mixture and bring to the boil. Reduce heat to a simmer and cover tightly with lid.
- Cook for around 15 minutes and then remove lid. Add more stock or water if rice is still crunchy. Add peas and then return lid and cook for another 5-10 minutes until rice and peas are soft.
