1 500g boneless pork fillet
1/2 tsp cayenne pepper, salt and ground black pepper, to taste
1 cucumber, thinly sliced
3 Tbs cider vinegar
2 Tbs olive oil
2 t brown sugar
1/3 cup mayonnaise
4 crusty bread rolls, split


  1. Heat oven to 210 degrees C. Season the pork with the cayenne and pepper. Roast on a baking sheet lined with baking paper for 20 to 25 minutes until centre of meat is cooked through with no evidence of pink; thinly slice.
  2. Meanwhile, combine the cucumber, vinegar, oil, brown sugar, and ┬╝ teaspoon each salt and black pepper in a medium bowl.
  3. Divide the mayonnaise, pork, and cucumber among the rolls.
